Cook’s Recipe: Bleu Cheese Potato Crisps

Thaxus began shoveling another serving of this delicacy onto his plate from the heaping mountain in front of him. Four times now, the servants kept trying to take it away from him and every time, he violently refused.

I first had this dish while traveling and immediately fell in love with the delicious combination of fresh, crispy chips and smooth bleu cheese sauce. Yes, this is completely excessive and indulgent but it is beyond delicious. There is something special about making your own potato chips, and then smothering them in bleu cheese.

Bleu Cheese Potato Crisps
Makes enough for 3 people

Ingredients
1 large russet potato, scrubbed and cleaned
1/3 cup of bleu cheese, crumbled
1 green onion
1/4 cup of cream
Salt and pepper to taste
Oil for frying

Equipment
Mandolin
Deep fryer
Baking sheet
Sauce pan
Wisk

Directions

To make the chips…

This step can be done in advance.

Heat the oil in your deep fryer to 350 degrees F. If you don’t have a deep fryer, you can heat the oil in a large pan or pot with high sides to minimize splattering. If you don’t have access to a thermometer, you can test the heat by dropping a single slice of potato into the oil and if it sizzles the temperature is right. Do not heat the oil on a high setting.
Scrub and wash the potato and then slice it thin chips using the mandolin. Soak the potatoes in cold water to wash away the excess starch. After soaking them, lay them out on paper towels to dry them.

Add a single layer of potato slices to the oil and fry until they begin to brown. These will not look like they came out of a bag of Lay’s! It should take between 2 and 3 minutes, depending on the thickness. When the chips are done, set them aside on fresh paper towels to absorb the excess oil and gently season with salt and pepper if desired.

To make the sauce…

Finely dice the green onion, but set aside the green stalk after dicing. In a sauce pan, begin to sauté the onions. Then add the cream and bring to a near boil over medium heat. Once the cream begins to bubble, remove it from the heat and whisk in half the bleu cheese and a pinch of salt.

To assemble everything…

Preheat the oven to 350 degrees F. On a baking sheet, pile the chips and top with the bleu cheese sauce, remaining bleu cheese crumbles and the remaining diced green onions. Bake for 10 minutes until the bleu cheese crumbles begin to melt. Serve immediately either as an appetizer or a side with burgers.
